How to Cook Hyderabadi Biryani

Making a Mutton Marinade:

The meat of your choice, yogurt, ginger-garlic paste, red chili powder, turmeric powder, biryani masala, and salt should all be combined in a large mixing bowl. To evenly coat the meat, thoroughly mix. For optimal results, marinate it for at least two hours or overnight in the refrigerator.


Preparing the Rice:

Basmati rice should be thoroughly washed and soaked for 30 minutes. Drain and set aside.


Cooking the Biryani:

           Heat the cooking oil and ghee in a large, heavy-bottomed pan. Add sliced onions and cook them in the oil until golden brown. Remove half of the cooked onions from the pan to be used as garnish.

           Place the marinated meat in the pan and cook until the color changes and the seasonings are thoroughly absorbed.

           After adding the chopped tomatoes, simmer them for a few minutes or until the oil starts to separate. The meat mixture should be covered with half of the cooked rice.

           Top the rice with half of the fresh mint, coriander, and green chili leaves. With the remaining rice and herbs, repeat the process.

           Pour the milk that has been infused with saffron over the top of the rice.

           Put the pan on low heat and cover it with a tight-fitting lid. Cook it for 30-35 minutes, or until the meat is well cooked and the rice is fluffy.
