How to Cook Hyderabadi Biryani
Making a Mutton Marinade:
The meat of your choice, yogurt, ginger-garlic paste, red chili powder, turmeric powder, biryani masala, and salt should all be combined in a large mixing bowl. To evenly coat the meat, thoroughly mix. For optimal results, marinate it for at least two hours or overnight in the refrigerator.
Preparing the Rice:
Basmati rice should be thoroughly washed and soaked for 30 minutes. Drain and set aside.
Cooking the Biryani:
• Heat the cooking oil and ghee in a large, heavy-bottomed pan. Add sliced onions and cook them in the oil until golden brown. Remove half of the cooked onions from the pan to be used as garnish.
• Place the marinated meat in the pan and cook until the color changes and the seasonings are thoroughly absorbed.
• After adding the chopped tomatoes, simmer them for a few minutes or until the oil starts to separate. The meat mixture should be covered with half of the cooked rice.
• Top the rice with half of the fresh mint, coriander, and green chili leaves. With the remaining rice and herbs, repeat the process.
• Pour the milk that has been infused with saffron over the top of the rice.
• Put the pan on low heat and cover it with a tight-fitting lid. Cook it for 30-35 minutes, or until the meat is well cooked and the rice is fluffy.
Final Assembly:
When finished, use a fork to delicately combine the layers of the biryani. As a garnish, include the leftover fried onions.
